Garlic roasted chicken with vegetables is a whole chicken rubbed with olive oil and stuffed with a mixture of seasonings. Roasted and grilled in a large skillet combined with fresh, flavorful vegetables! This combination is perfect for any dinner time meal! If you love your instant pot, you can also make this roast chicken recipe in less time. This is my favorite recipe to cook and it just because my family loves this menu and we all make the preparations together which gives lot of fun.

Ingredients and spices that need to be Make ready to make Chicken Roast:

  1. 1 whole chicken, roughly 1.5 kilograms
  2. 3 tablespoons olive oil, to drizzle on chicken when roasting
  3. Filling
  4. 3 tbsp vegetable oil
  5. 3/4 tsp cumin seeds
  6. 2 medium onions, chopped fine
  7. 2 tsp garlic paste
  8. 1 tsp ginger paste
  9. 300 grams ground or minced chicken
  10. 1 tbsp ground coriander
  11. 1 tsp ground cumin
  12. 1 tbsp garam masala
  13. As required Salt to taste
  14. 2 medium tomatoes, chopped fine
  15. 1 cup fresh or frozen peas
  16. 1 large potato, peeled and cut into 1-inch cubes
  17. 1 tsp lemon juice
  18. 1/4 cup fresh coriander leaves, chopped
  19. Marinade
  20. 2 tbsp unsweetened yogurt
  21. 2 tbsp lemon juice
  22. 2 tsp garlic paste
  23. 1 tsp ginger paste
  24. 1/2 tsp red chili powder
  25. 1/2 tsp salt
  26. Vegetables
  27. 300 gms baby potatoes
  28. 3 carrots cubed
  29. 1 tbsp olive oil
  30. 10-12 baby tomatoes
  31. 7-8 french beans
  32. 3-4 lettuce leaves
  33. Sauce for dip
  34. 2 tbsp all-purpose flour
  35. 2 tbsp butter
  36. 1 cup milk
  37. 1 cup chicken stock(I used 2 maggi chicken cubes in 1 cup water)
  38. as per taste salt
  39. 4-5 minced garlic cloves

Steps to make to make Chicken Roast

  1. Heat 3 tablespoon oil in a wok or deep pan on medium heat.Add the cumin seeds and fry for 1 minute. Add the onions and fry until they turn a pale golden color. Add 2 teaspoons garlic paste and 1 teaspoon ginger paste and fry for 1 minute.
  2. Add the ground meat, ground coriander, cumin, garam masala, and salt to taste. Continue to brown the ground meat, stirring often to prevent burning. This should take about 5 to 7 minutes. Add the tomatoes, peas, and potatoes and stir and cook until the potatoes are soft. Mash well to make uniform stuffing. Turn the heat off and add the lime juice and chopped coriander leaves. Mix well.
  3. In a medium sized bowl add the onions, boiled potatoes, blanched beans and carrots,tomatoes and toss in olive oil, salt and pepper. Layer on outside of the chicken in the roasting pan.
  4. In a large, deep bowl, mix together yogurt, 2 tablespoon lime juice, 2 teaspoons garlic paste, 1 teaspoon ginger paste, chili powder, turmeric, and salt. Place the whole chicken into this marinade and coat it well. Cover the dish with plastic wrap and marinate for 2 to 3 hours in the refrigerator.
  5. Remove the marinated chicken from the refrigerator and fill the stomach cavity with the minced meat stuffing. Try to get all the stuffing inside if possible. Put in a baking/roasting dish and drizzle all over with ​cooking oil.
  6. Prepare the sauce: Put the pan on the stove over medium-high heat. Add the butter to the drippings of the minced meat mixture in the pan, add minced garlic, Cook, stirring frequently, for about a minute. Add 2 tbsp all-purpose flour and roast till sandy brown. Add a cup of milk, chicken stock and stir well, and let the sauce reduce for about 5 minutes. Taste and add more salt if needed
  7. Roast the chicken in grill mode followed by convection mode in microwave oven uncovered for 1 hour and 20 minutes at 350°F to 375°F. This will differ depending on the microwave oven. It will ideally, be golden in color and check with a small knife whether it is cooked from inside also and by now ready to eat.(The chicken is cooked when you pierce the thickest part of the thigh with a sharp knife, and the juices run clear.)
  8. Rest the chicken for 10 minutes before slicing into it to keep all those delicious juices sealed inside. This method results in a chicken that’s perfectly juicy on the inside, with deliciously crispy skin on the outside. Check and ensure the vegetables are also cooked well. Now drizzle the prepared sauce over the chicken and keep in a bowl as a dip during serving the roasted chicken.
