Ingredients and spices that need to be Take to make Instant Jalebi:
- 1 cup all-purpose flour / maida
- 1/2 cup yoghurt
- 1/4 tsp salt
- as required Water to make a thick batter
- 1/2 tsp baking soda
- For the Sugar Syrup
- 2 cups sugar
- 1 cup water
- 1/2 tsp lemon juice
- A few strands of saffron
- as required Ghee for frying
Steps to make to make Instant Jalebi
- Mix all the ingredients listed under 'for the jalebi batter', except baking soda, to make a thick batter – consistency slightly thicker than pancake / dosa batter. Keep aside for 5-10 minutes.
- While the batter is resting, prepare the sugar syrup. Boil the sugar & water for a couple of minutes.
- Add lemon juice to the sugar syrup. This will give you clear syrup and add the required tartness to the jalebis, for that fermented batter flavour.
- Boil the sugar syrup till it reaches 1 thread consistency (ek taar). Keep aside and cool slightly – we need a moderately warm sugar syrup to dip the jalebis in.
- Add saffron strands to the sugar syrup, while its kept aside for cooling.
- Once you’re ready to fry the jalebis, start heating enough ghee (to cover approx. 1 inch of the pan) in a shallow frying pan on medium low flame – I prefer a flat bottom frying pan.
- Add baking soda to the batter, mix well and pour the batter in to a piping bag or a squeezy bottle. Start piping round jalebis and cross the circle so the jalebis hold shape.
- Fry on medium flame till very slightly coloured – approx. 1-2 minutes and immediately dip the jalebis in the sugar syrup for around 15 seconds.
- Let the excess sugar syrup drip and place the jalebis on a plate to cool or serve warm.
- Serve these delicious instant jalebis as is or with milk or yoghurt – the way you like it!
