- Mix all dry ingredients. Add oil & mix well.knead soft dough with luke warm water around 1/4-1/2 cup.use less water & knead more to get soft elastic texture of dough.cover & leave to rest for some time.


- Make small round balls or pairay from dough.roll each paira in small roti or puri.I hv used not used dry flour while rolling puris. Mostly I use hands to press puri & little rolling pan.if needed you can use dry flour to roll puris.


- Keep oil to heat up.check the oil is properly heated before adding puri in oil.DO NOT add puri in cold oil.add one puri at a time in oil,it will pop up at surface.turn around to cook then take out from oil.fry all puris in same manner.some will puff up some not.
